[RECIPE] - High Protein, Low Carb Chicken Muffins

This recipe is so easy to follow, a monkey could make them.  These muffins can be made for dinner or even to take as snacks throughout the week.

Here is a simple 7 step guide to making these yummy high protein, low carb chicken muffins.
Healthy snacks that pack a protein punch without the carbs are hard to find.

Until now.

Here is a simple 7 step guide to how I make these muffins with only 5 ingredients. Yep, if I can make them, you can too.

The recipe yields 11 x muffins so increase or decrease the amounts depending on how many you want to make.

High Protein, Low Carb Chicken Muffins Recipe

PER MUFFIN (recipe yields 11):
Calories: 124
Fat: 3g
Carb: 1.2g
Protein: 17.4g

Ingredients:
  • 560g chicken breast 
  • 4 x whole eggs 
  • 1 x cup chopped onion
  • 1 x cup chopped celery
  • 50g Bega 'So Light' shredded cheese​

7 Simple Steps (clockwise):
  1. Cook chicken in a pan and add spice of your choice.
  2. Brown off celery and onion 
  3. Cut the chicken in a big bowl until it's "shredded"
  4. Add celery, onion and four eggs and mix 
  5. Mix in the cheese 
  6. Add to muffin moulds (I used silicon moulds) and put in the oven for 15-20mins at 170 degrees Celsius.
  7. Consume with a side of salad or veggies of your choice!​
